Everyone does it. You buy bananas when they are on sale, and then half of your great bargain goes bad! Then it’s not such a great deal after all!
Bananas are a staple in the fall. They are a great price. They are a great source of potassium and fiber, also. You can freeze those over ripe gems, but then what do you do with them? Make that dreadful, dried out banana bread recipe of Grandma’s? BORING! The kids won’t touch that stuff with the walnuts in it!
I have some recipes for those bananas that will knock their socks off, plus give you a way to use all of those black bananas in your freezer, or those spotty ones that are just about one second from being too ripe to eat alone. These recipes are simple to prepare, and, as I said, you probably have the main ingredient in your freezer or laying in your kitchen somewhere! You will be able to justify the cash spent on your bargain bananas!
This banana cake recipe is evokes so many emotions for me. When I was a little girl, we had this wonderful babysitter that could make a shoe taste good! Mom would leave money for us to go to the grocery store, but Clissa never would need to go, because she could just make do with anything we had, (including over ripe bananas). We always loved it when Clissa would come because she would make us doll clothes out of Mom’s scraps of material. She would teach us songs and she always sang “Happy Trails”. Anyway, this cake is so good. It is not difficult, and you could definitely serve it to company.
The banana pudding recipe is also a family favorite. It is different because you do not layer it so much, but pour the pudding over layers of vanilla wafers and sliced ripe banana. It is also really good the next day, after it has been in the fridge overnight and the cookies and vanilla pudding absorb the banana taste. Yum!
The banana bread recipe is a recent family favorite, within the last 12 years or so, which my mother found somewhere. It has a delightfully different taste delivered by the addition of crushed pineapple to the mix. This large loaf makes a great gift at Christmas time, or when a friend needs a pick-me-up.
Bananas are abundant and cheap, BUT can be boring! I’ll share some new ways this week to use up those bananas!
