Wild Rice Salad with Poultry
1 pkg. long grain and wild rice mix
½ c golden raisins
½ c sliced celery
2T minced red onion
2 thinly sliced green onions
3 c cooked, cubed chicken or turkey
¼ c green grapes, halved
¼ c red grapes, halved
Vinaigrette:
2T cranberry juice
2T balsamic vinegar
2T olive oil
Salt and pepper
Cook rice. Add raisins and cover for 10 minutes. Place in bowl and let cool completely.
