Everyone loves those new “cakesters”. They just fly off of the shelves. My kids always try to slip some into my cart at the grocery store. They are a bit pricey, and they are never as good as you imagine them to be. Then it hit me. I could try to make some from scratch!
I then remembered a friend from Pennsylvania who made these “whoopie pies” for a super bowl party I went to years ago. She said that they sell them in Pennsylvania everywhere from roadside stands, to bake sales, to the grocery store. I got her recipe for these dreamy, cream-filled little sandwich cakes.
They are just so decadent! You must try them! Your family will absolutely LOVE them.
Whoopie Pie Recipe
CAKES
1/2 c butter or margarine
2 c sugar
2 egg yolks
1 c hot water
1 c cocoa
1/2 t salt
1/2 c shortening
2 whole eggs
1 c buttermilk
4 c flour
2 t soda
1 t vanilla
Cream butter, shortening, sugar, and add egg yolks. Next, add eggs one
at a time. Add vanilla. Sift together flour, soda, and salt.
Add alternatively with buttermilk. Mix together water and flour,
then add to the mix.
Drop batter by tablespoons onto cookie sheet sprayed with non-stick spray.
Bake at 375 degrees for 7-10 minues or until toothpick inserted in center
comes out clean. Place on rack to cool while preparing filling.
FILLING
2 egg whites
4 T flour
4 T milk
2 t vanilla
4 T confectioner’s sugar
Mix above together, then add:
3/4 c butter
4 c confectioner’s sugar
3/4 c shortening
Beat filling until fluffy. More or less confectioner’s sugar can be added
until desired consistency is obtained.
Spread filling onto flat side of one cookie then top with another cookie
to make a sandwich.
Wrap each finished whoopie pie tightly in plastic wrap.

I was shooting a wedding last spring and the bride and groom had the most amazing candy table. On the table, they had Wicked Whoopie Pies arranged beautifully. The name was a “hit” and brought a smile to everyone’s face. I have thought about them often. Now, I get to make “Wicked Whoopie” myself! Thanks for sharing!
