Chicken Tamale Casserole | February 24, 2009

Chicken Tamale Casserole

Serves 6

3 canned tamales, cut into bite-size pieces
1 c tomato pulp, or crushed tomatoes
1 c kernel corn
1 c ripe, chopped olives
1/2 c chili sauce
1 T olive oil
1 T worcestershire sauce
1 c cooked chicken, cut into bite-sized pieces
1 c grated sharp cheddar cheese

Mix and put into 9×13 baking dish.  Top with grated cheese.
Bake at 350 degrees for an hour.  I ALWAYS DOUBLE THIS.  (At least!)

The other day I was trying to think of some of the old stand-bys my mom used to cook for us when we were growing up.  I thought of some of my favorites, and yes, indeed, they were CASSEROLES!  I like them.
