February seems long, cold, and gloomy. It cannot pass quickly enough for me! I always try to manage my “February blues” by trying to have something to look forward to, like planning our summer vacation, or getting the craft box out to work on unfinished projects. I also try to make Valentine’s Day special for my husband, and even my kids. I try to give my kids a little treat, like a card in their backbacks, or a little sweet treat in their lunch bag.
For my husband and I, I like to make a romantic dinner for just us. Sometimes it is difficult to pull off, but it is possible to have a private dinner for two. We just tell the kids to make plans, or make arrangements for the younger ones to go to a friend’s house. Then I can whip up a romantic, quiet dinner for just TWO and not SEVEN!
This year I am going to make champagne chicken breasts, wild rice, and a wonderful green salad. To finish it off, I am going to make an easy layered tiramisu dessert.
Try to carve out time for a quiet dinner for two. Get reacquainted with your mate. Show them how much they mean to you by making a special meal just for the two of you on Valentine’s Day.
