dreamstime 2374387 300x200 Macaroni and CheeseMac N Cheese is the staple around my house and basically the only thing my daughter truly likes to eat.  At Chef Camp this summer, she was able to make this wonderful dish from scratch.  Not sure if she would like it as well as frozen Stouffer’s or Kraft in a box, I casually asked her opinion.  “Mom,” you have to hear the true teenager tone in her voice…. “Stuff is always better when I make it myself.”

Enjoy!

  • 16 ounces elbow macaroni (cooked according to package directions)
  • 1/2 cup butter
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup four
  • 3 1/2 cups milk
  • 1 lb. Velveeta cheese, cut into cubes
  • Breadcrumbs

Preheat the broiler on LOW in the oven.  In a pan, cook butter, salt, pepper and flour and stir until smooth.  Remove from heat and add milk, return to heat and bring to a boil.  Remove from heat and add cheese, stir until melted.  Pour over cooked macaroni noodles and stir to combine.  Pour cheesy macaroni into an oven safe dish and top with breadcrumbs.  Broil in oven on middle rack until golden and crisp.
