This is one dish I can never get enough of! Hummus on flat bread is one of my favorite snacks!
Hummus
Juice from 2 lemons
3 tablespoons tahini, stirred well
2 tablespoons extra virgin olive oil
1 can chickpeas, drained and rinsed
2 small garlic cloves, smashed and roughly chopped
1 teaspoon kosher salt (1/2 teaspoon table salt)
1 tablespoon minced fresh cilantro or parsley leaves
- Whisk together tahini and 2 tablespoons oil in second small bowl or measuring cup.
- Process chickpeas, garlic, and salt in food processor. Scrape down bowl with rubber spatula. Add lemon juice and mix. Scrap down bowl with rubber spatula. With the machine running, add the tahini-oil mixture in a steady stream through the feed tube. Process until smooth, scraping down the sides of the bowl if necessary.
- Transfer to serving bowl. Sprinkle with fresh cilantro or parsley.
Grilled Flatbread
1 1/4 cup water
1 teaspoon yeast
3 cups four, plus more for kneading
2 teaspoons coarse salt
2 tablespoons olive oil
Combine yeast and flour and add water. Mix then add salt and olive oil.
Heat grill to medium-high. Divide dough into 6 pieces and toll out until quite thin. Grill about 1 1/2 minutes on each side.
