There is a lot of love for banana muffins in our house. I was trying to remember just how long I have been making these jumbo sized muffins and it’s definitely been over 20 years since I got my first large muffin pan.
These muffins are terrific, not hard to make and ready to eat pretty quickly. All of those reasons contributed to why they are so popular here. I think you will love them, too!
Preheat your oven to 400 degrees F. Spray a jumbo muffin tin with Baker’s Joy or grease cups.

In a large bowl, mix flour, sugar.

Add baking powder and mix.

Cut the butter in until it resembles coarse crumbs.

Stir in the walnuts and set aside.

Place the bananas, eggs
Milk

And vanilla into a blender.

Blend until bananas are chopped.

Stir banana mixture into flour mixture just until flour is moistened.

Spoon into prepared muffin pan. Bake for 25-30 minutes until muffins are golden.

Jumbo Banana Nut Muffins
2 ½ cups all purpose flour
¾ cup sugar
1 tbs baking powder
4 tbs butter
½ cup chopped walnuts
3 small, ripe bananas
2 eggs
1/3 cup milk
1 tsp vanilla
Preheat oven to 400 degrees F. Grease 6 jumbo muffin pan cups.
In a large bowl, mix flour, sugar, and baking powder. Then cut in butter until mixture resembles coarse crumbs; stir in walnuts and set aside. In a blender at high speed blend bananas, eggs, milk and vanilla for a few seconds until the bananas are chopped. Stir banana mixture into flour mixture just until flour is moistened. Batter will be lumpy.
Spoon batter into muffin pan cups. Bake 25-30 minutes until golden and a toothpick inserted in center comes out clean. Muffins will rise very high. Immediately remove muffins from pan and serve warm.
