I adore nectarines. They are my favorite summer fruit. I eat plenty of them during the season but I don’t think it’s ever enough because by the time summer rolls around again, I’m fiending for some more. I saw this recipe for a summer fruit cake and knew that I would use nectarines for it. I’ve never eaten a nectarine “in” something except for my hand. Well, it was YUMMY!
Start by preheating your oven to 350 degrees F and butter an 8×8 inch pan.
Peel and slice four nectarines.
Combine cake flour, baking powder and salt.
In a separate mixing bowl beat butter and sugar until light and creamy.
Add the eggs, one at a time, beating well after each.
Add flour in a little at a time, beating after each addition.
Spread half of the batter into prepared pan;
Top with nectarines.
Spread rest of the batter on top.
Chop walnuts, add sugar and cinnamon.
Sprinkle over the top.
Bake 50 minutes.
Served warm with ice cream this is Mmmmm FABU!
Summer Fruit Dessert Cake
1 cup flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup butter, softened
1/2 cup sugar
2 eggs
4 nectarines, peeled and sliced
Topping
1/2 cup sugar
1/2 teaspoon cinnamon
1/2 cup chopped walnuts
Heat oven to 350 degrees. Grease an 8-by-8-by-2-inch pan.
Combine cake flour, baking powder and salt. In a separate mixing bowl beat butter and sugar until light and creamy. Add the eggs, one at a time, beating well after each. Add flour in a little at a time, beating after each addition. Spread half of the batter into prepared pan; top with nectarines. Spread rest of the batter on top.
In a separate bowl, mix sugar, cinnamon and walnuts; sprinkle over the top. Bake 50 minutes. Serve warm or cold with whipping cream or ice cream. Would also be terrific made with peaches or plums!
