My daughter and her family have dinner at my house every Sunday. I try to prepare something that is healthy and delicious. My six year old grandson, Dylan, loves chicken, salad, and fruit. Here is a simple meal for a family of four that always satisfies.
INGREDIENTS:
4 skinless, boneless chicken breasts
8 gourmet petite red-yellow Idaho potatoes
2 Cara Cara Navel Oranges
Romaine lettuce leaves
Broccoli
1 Cucumber
DIRECTIONS:
Pre-heat your oven to 350. Slice each breast lengthwise into 4 or 5 pieces. Slice the potato lengthwise in half, then in half again. Place in a baking dish. Add a touch of olive oil, salt, and pepper. Sprinkle the potato with a little paprika. Bake for 30 minutes.
I like to soak the lettuce in ice water for about 10 minutes for added freshness. Then, mix the Romaine, sliced cucumber, and broccoli with a little oil and vinegar. Add salt and pepper to your taste.
Don’t forget the orange. Enjoy!
