Grilled Rib Eye Steaks with Roasted Garlic Butter
Entrée / Beef Recipe
Servings: 4
Total Time: 1 ¼ hours
Ingredients:
• 4 Meat House boneless beef rib eye steaks, about 1 inch thick and ¾ – 1 lb each
• 1 head garlic
• 2 tsp fresh chopped thyme
• 2 tsp extra virgin olive oil
• 5 Tbsp of butter, at room temperature
• Kosher salt, freshly ground pepper
Instructions:
1. To make the garlic butter, pre-heat oven to 325° F. Break head of garlic into individual cloves but do not peel them. Toss cloves with olive oil to coat them lightly and then wrap them loosely in aluminum foil. Bake cloves until tender, about 40 minutes. Remove from oven and let cool.
2. Peel the cooled cloves and cut off hard tips. Pound them into a paste with the flat side of a chef’s knife on a cutting board. Add butter and thyme. Mix until smooth. Season with salt and pepper.
3. Preheat grill for direct grilling over medium-high heat.
4. Season steaks with salt and pepper. Place steaks on grill rack directly over heat. Grill turning once, to desired doneness, 4 to 5 minutes on each side for medium rare.
5. Transfer steaks to warmed plates. Spread an equal portion of garlic butter on each steak. It will melt on contact. Serve immediately.
