Cold Asparagus and Shrimp Salad

INGREDIENTS:

¼ pounds asparagus, woody ends trimmed and spears sliced into 1½-inch lengths
3 tablespoons lemon juice (from about 1 lemon)
¼–½ teaspoon kosher salt
¼–½ teaspoon freshly ground black pepper
1 to 2 teaspoons sugar, depending on the sweetness of your lemons
3 tablespoons olive oil
2 tablespoons thinly sliced red onion
½ pound cooked shrimp

Black & Blue Mojito

A great summer time Mojito made with Driscoll’s blackberries and blueberries.
2 oz 10 Cane Rum
1 oz lime juice
1 oz simple syrup
3 blackberries
10 blueberries
pinch of mint
Splash of soda water

In a mixing glass, muddle the berries and mint with the lime juice and simple syrup. Add the 10 Cane rum. Top with crushed ice. Add a splash of soda water and stir. Garnish with mint sprig and additional berries.

Healthy Snack: Yogurt Ranch Dip & Veggies | June 16, 2011

YOGURT RANCH DIP & VEGGIES

By Nicole Selinsky and New Image Weight Loss Camps www.newimagecamp.com for children and teens ages 7-19

Makes 6 servings

Equipment Needed:

-Measuring cups

-Mixing bowls

-Spoon, Knife, Cutting Board

Ingredients:

-1 ounce ranch dressing mix

-2 cups low-fat plain yogurt

-3 Celery stalks, cut into sticks

-3 Carrots cut into sticks

Method:

1. Cut each washed carrot or celery stick into 4 pieces.
2. Combine yogurt and dressing in a large bowl until blended.
3. Serve as a dip with celery and carrots sticks.

Serving size: 2 tbsp. dressing and 2 celery and carrots sticks

COTTON + STRETCH = CUTE BUTT: Cotton jeans are the lightest for summer because they are airy and breathable, however, jeans with a small content of stretch are the most flattering. They will move with your body and it’s movements.

BEST DENIM BLENDS: Chrissy suggests denim with a high cotton content, and small synthetic content. A jean with either a 98% cotton/2% lycra or 96 % cotton/4% Lycra fabric, is a good combination. Joe’s Jeans, Seven For all Mankind, Citizen, Gap are all great for this content!
