Wine, orange, and red are great color combinations for the fall! It’s such a surprising combo and ultimately sexy! Mix and match these three colors for one of the best looks of the season. When accessorizing, make sure not to go too overboard with any jewelry since the color combination in itself makes a bold enough statement without adding anything too extreme. Fall Meals: Acorn Squash | October 20, 2011

Acorn Squash Stuffed with Quinoa, Feta, Chard, and White Beans

By: Robin Donovan and Juliana Gallin, authors of The Lazy Gourmet: Magnificent Meals Made Easy

Ingridients:

2 medium acorn squash

2 tablespoons olive oil, plus more for brushing the cut squash

1 medium shallot, diced

2 clove garlic, minced

1 14-ounce can white beans, such as cannellini, rinsed and drained

1 cup uncooked quinoa

2 cups vegetable broth

1 bunch (about 18 leaves) chard, preferably red, stems removed and leaves julienned

¾ teaspoon kosher salt

1 teaspoon paprika

¼ cup diced Kalamata olives

4 ounces feta cheese, divided

2 tablespoons (packed) minced fresh mint leaves

Fall Meals: Shrimp Bisque | October 18, 2011

 

Shrimp Bisque

This is a traditional seafood bisque thickened with rice and enriched with heavy cream. Feel free to substitute other shellfish and/or broth, such as lobster, crab, or crayfish for the shrimp.
