Wednesday Soup: French Onion Soup | May 2, 2012

Slathered with cheese, onion soup is the flagship of many a fine beef restaurant. Served piping hot, the aroma of sautéed onions in a rich beefy broth precedes it. Its exotic taste whets the appetite and inspires hope that the main course will be as good as it is. You can tantalize your family, your friends or your significant other with a great onion soup of your own. Adding a little wine, a little sherry, and a pinch of your love make your soup a soup to die for.

Ingredients:

4 tbsp & 4 pats butter or margarine (divided use)

4 large onions

Tuesday Entree: Gluten-Free, Dairy-Free, Yeast-Free Pizza | May 1, 2012

Have you ever tried making your own gluten-free pizza? Chances are, you’ll likely surprise yourself! This recipe is my favorite recipe for pizza (which happens to be my own!) This is the recipe as it appears in my book, Where Do I Start? Your Essential Gluten-Free, Dairy-Free and Sugar-Free Food Allergy Cookbook.

The crust is gluten-free, dairy-free, sugar-free and yeast-free. Since it doesn’t have yeast, it doesn’t take long to prepare, and comes out as a thin and crunchy crust (definitely not like pizza chain crusts). I’ve suggested some spices, but feel free to experiment with your own favourite spice blends to … Read More »

Meatless Monday: Portabello Mushroom With Yellow Grits and Mushroom Jus | April 30, 2012

American Southern Cuisine is the comfort food of our country.  Humble, hearty, soul satisfying and old fashioned.  It is home-style cooking at its best. What could be more delightful then to think of Southern cuisine as vegetarian cuisine? Now that is something that is rarely talked about, but it is a fast-growing trend in our health conscious world today.

Let’s take the Roasted Portabello Mushroom dish for instance.  The mushroom is first marinated in olive oil, garlic and herbs, (rosemary, thyme and Italian parsley) then seasoned with sea salt and cracked black pepper. It is then placed in a 400 degree … Read More »

Friday Desserts: Lemon-Blueberry Cupcakes | April 27, 2012

Everybody loves cupcakes, but most have so much frosting on it that it takes away from the cake part of the cupcake. Also, there is nothing better than fresh blueberries. This cupcake mixes light frosting, blueberries, and a hint of lemon flavor to get your mouth watering. The blueberries get baked in the cupcake as well as sprinkled on top of it for more flavor and presentation. Here is the recipe for Lemon-Blueberry Cupcakes:

Ingredients

1 1/2 cups (about 6 3/4 ounces) plus 2 tablespoons all-purpose flour, divided
10 tablespoons granulated sugar
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/8 teaspoon baking soda
1/4 cup butter, … Read More »

Friday Tapas: Bread with Mushrooms and Alioli (Tostada de Setas) | April 27, 2012

Friday Tapas: Bread with Mushrooms and Alioli (Tostada de Setas)

With summer practically upon us, it’s nice to have a couple small tapas recipes under the belt for those warm summer night parties or neighborhood get-togethers.  And since most of us don’t have the luxury of breaking out our no foreign transaction fee credit card and hopping a plane for Spain anytime soon, why not bring the flavors of Spain to us?  Trust me: it’s much cheaper, that is unless you’re one of the lucky ones with a Double Miles 100,000 Bonus like my neighbor, who happens to be hopping on over to Spain as we speak.  When she gets back … Read More »

Thursday Salad: Simple Herbed Salad with Sesame Tahini Dressing | April 26, 2012

Here is a quick and easy salad that you can whip up in no time. It’s a great combination of fresh produce and the fresh basil and cilantro add a perfectly sweet taste to this dish when combined with my Sesame Tahini Dressing. Try making this dish for an appetizer before dinner then serve the leftovers throughout the week in pitas, wrapped into tortilla with grilled chicken or tofu, or as a main dish with grilled fish or tempeh.

This salad is just in time for the nice warm weather Spring is bringing so why not whip up this dish for … Read More »

Wednesday Soup: Paella Chowder | April 25, 2012

I love hearty soups and I love the flavours of Spain, so this is one of my favourite chowder recipes.

Studded with spicy sausage, prawns, chicken breasts , green peas and saffron-hued rice , this is a perfect year round bowl of goodness. The pureeing of the cooked rice gives it its smooth and rich texture. The flavours of the lobster paste , saffron and sherry are what puts it over the top, and the adding of the prawns and sausage give it complete texture and balance that is just beautiful.

It can be served as a complete lunch or dinner paired … Read More »

Tuesday Entree: Lebanese Stuffed Chicken | April 24, 2012

My Lebanese mother-in-law (who did not know what a measuring cup/spoon was) would tell me not to add too many pine nuts to this recipe because they were like “deeheb” or gold in value.  My response was to tell her, “But that is what makes it “taebyne” or delicious!

The nice part about this recipe is that it makes a terrific holiday meal or just special occasion that can be done in stages.  As a mother of four children (twins in between) this was a deal breaker with not having much time to spare.  In fact, during the time that I … Read More »
