Pork Chops Baked with Apples | September 2, 2010

I’m always looking for healthy meals to prepare for dinner. We like to sit down as a family and talk about the day. It makes me happy to know I’m serving a healthy meal. We had pork chops baked with apples the other night.  It was delicious! Using lean pork chops, apples and cruciferous sauerkraut, it all came together healthfully.

First you’ll want to slice a large onion, thinly.

Then peel, core and slice two medium red apples. I used Delicious.

Brush a large skillet with olive oil and preheat.

Vegetarian Spring Risotto with White Truffle Oil | August 30, 2010

INGREDIENTS:

* 2 teaspoons garlic, minced
* 2 teaspoons shallots, chopped
* 1 cup white wine or champagne
* 3 tablespoons olive oil
* 1.5 cups arborio rice
* 4 1/2 to 6 1/2 cups vegetable stock. Keep this warmed on the stove
* 6 artichoke hearts, chopped
* 1 cup of peas and carrots
* 2 cups of cut zucchini
* 4 stalks of asparagus angled cut
* 2 tablespoons white truffle oil
* Fresh minced parsely, for garnish
* 1/4 cup grated vegan mozzarella

DIRECTIONS:

1. Saute garlic and shallots in a saucepan; deglaze the pan with champagne and reduce to half the original volume.

Summer Dessert Cake | August 28, 2010

I adore nectarines. They are my favorite summer fruit. I eat plenty of them during the season but I don’t think it’s ever enough because by the time summer rolls around again, I’m fiending for some more. I saw this recipe for a summer fruit cake and knew that I would use nectarines for it. I’ve never eaten a nectarine “in” something except for my hand. Well, it was YUMMY!

Start by preheating your oven to 350 degrees F and butter an 8×8 inch pan.

Translated from Spanish to English, Abuela’s Avena means grandma’s oatmeal. On my recent trip to Puerto Rico, I enjoyed many bowls of oatmeal (sadly not my grandma’s, but very close it), and since I’ve come back, it’s the only thing I’m craving for breakfast these days.

Seafood Risotto with White Truffle Oil | August 23, 2010

INGREDIENTS:
