Forgotten Puddings | February 16, 2009

Most people you talk to have not had either bread pudding or rice pudding lately.  This is a crying shame because these desserts are some of the best! Bread pudding sounds kind of dry, but it is not.  It is buttery and creamy  and warm. It is just the perfect comfort food. Bread pudding is traditionally  from our southern states, but the British, also, have their version.

Layered Tiramisu Dessert | February 13, 2009

Layered Tiramisu Dessert

1 c strong coffee or espresso
1/3 c amaretto liquer
12 ladyfingers
1 c heavy cream
1/2 c brown sugar
1/2 c grated dark chocolate

Mix the coffee and amaretto in a bowl.  Crumble the ladyfingers and let them soak in the liquid for 2 minutes.  Whip the heavy cream and brown sugar until soft peaks form.  Take 4 dessert glasses and place somesoaked ladyfingers into the bottom of each glass.  Top with whipped cream.  Follow with another layer of soaked ladyfingers.  Repeat these steps ending with whipped cream on top.  Grate plenty of dark chocolate on top for garnish.  Chill and serve.

Mixed Green Salad | February 12, 2009

Mixed Green Salad

1 head romaine lettuce
1 cucumber, peeled and sliced
2 to 3 plum tomatoes, cored and cut into wedges
1 small red onion, thinly sliced
Olive oil and vinegar, to taste
salt and pepper to taste

Tear lettuce leaves into bite-sized pieces and transfer them to a large salad bowl.  Add the cucumber, tomatoes, and onion.  Sprinkle  with the oil, vinegar, salt, and pepper, and toss to combine.

Champagne Chicken Breasts for Two | February 11, 2009

Champagne Chicken Breasts for Two

1T Butter
1 whole, boneless, skinless chicken breast, cut in two
2T chopped scallion
2/3 c. champagne
1/4 c heavy cream
1/8 t salt
1 T butter

Prepared rice pilaf or wild rice

Pound chicken breasts between two sheets of waxed paper until thin.   Cook breasts in butter for about 3 minutes on each side until golden.  Remove  from pan and cover.  Add scallions to pan and cook until clear.  Pour in champagne and deglaze the pan and cook over high heat until reduced by half.  Add cream and salt.  Cook until sauce thickens slightly.  Whisk in remaining butter.  Put chicken breasts on … Read More »
