<p><strong>Ice Cream Sandwich Pie anyone?</strong></p>
<p><strong> </strong>By golly, sometimes you just need some ice cream. And sometimes you need a slice of pie. And sometimes all you have is a box of Ice cream</p>
<p>sandwiches and some extra items in the pantry. Don’t worry, here is an easy kid friendly recipe that is perfect for combining kid time with kitchen time with little or no fuss.</p>
<p>Granted, this is not brain surgery. And it may, or may not be, a recipe that your kids will include in their own recipe box to share with their children. But it is easy, and it&#8217;s fun, and you do get to spend some time in the kitchen with your little ones with out the fear of sharp knives and hot ovens.</p>
<p>The worst thing that could happen is the possibility of easting too many chocolate chips or too much whipped cream. Thankfully, I have never reached the maximum limit of  chocolate chips or whipped cream.</p>
<p><em>Now</em> that I’m thinking this over&#8230; this may actually be a GREAT recipe to pass down from generation to generation. Or at least from summer to summer. Regardless, I hope you enjoy this frozen treat and the memories you will have after a fun time with your kids in the kitchen.</p>
<p><strong>Ice Cream Sandwich</strong></p>
<p>Prep time: 15 min Cook time: 30 min to set in fridge or freezer.</p>
<p>Serves: 1-12 (Depends on the size of the slices)</p>
<p><strong>Ingredients</strong></p>
<p>6 – 8 ice cream sandwiches</p>
<p>1 graham cracker or cookie pie shell</p>
<p>Chocolate / Carmel chips</p>
<p>Crushed nuts if no allergies</p>
<p>Whipped cream</p>
<p>Magic hard shell chocolate coating</p>
<p><strong>Instructions</strong></p>
<p>Let the ice cream sandwiches, unwrapped,  warm for a minute or two in a large bowl. Then let the kids break them into small pieces&#8230; after they wash their hands of course. Next, let them stir in Chocolate or Carmel chips. Add in some chopped nuts and whatever your ice cream desire is. Spoon the mix into a pie shell pressing to firm, but not hard enough to break the pie shell. Drizzle with hard shell chocolate coating and chill to firm in the fridge or freezer. Serve cold with whipped cream and more chocolate and toppings as desired.</p>

Child traffickers were promising families in remote villages to protect their children from the civil war &#8211; - for a huge fee &#8211; - by taking them to safety. They would then abandon the children far from home, in the chaos of Nepal&#8217;s capital, Kathmandu.</p>
<p>For Conor, what began as a footloose adventure becomes a commitment to reunite the children he had grown to love with their families, but this would be no small task. He would risk his life on a journey through the legendary mountains of Nepal, facing the dangers of a bloody civil war and a debilitating injury. Waiting for Conor back in Kathmandu, and hopeful he would make it out before being trapped in by snow, was the woman who would eventually become his wife and share his life&#8217;s work.</p>
<p>Little Princes is a true story of families and children, and what one person is capable of when faced with seemingly insurmountable odds. At turns tragic, joyful, and hilarious, Little Princes is a testament to the power of faith and the ability of love to carry us beyond our wildest expectations.</p>

<p>I like to soak the lettuce  in ice water for about 10 minutes for added freshness. Then, mix the  Romaine, sliced cucumber, and broccoli with a little oil and vinegar.  Add salt and pepper to your taste.</p>
<p>Don’t forget the orange.  Enjoy!</p>

This delicious recipe has many superior nutrients that will help keep children healthy and strong! The fish will saturate a child’s body and mind with phosphorus, niacin, selenium, vitamin B12, and potassium while the brown rice and veggies will nourish with even more vitamins, minerals and glycemic friendly carbohydrates.</p>
<p>Super moms will definitely be smiling as they glide in, stress free, to the nutritional rescue of their child with Kid Friendly Tilapia.</p>
<p><strong>Kid Friendly Tilapia</strong></p>

<p>INGREDIENTS:</p>
<p>1 jar Tostitos cheese dip (or your family&#8217;s favorite cheese dip)<br />
4 Tilapia Filets<br />
1 T butter<br />
2 T Extra Virgin Olive Oil (EVOO)-divided<br />
2 T Cajun spice (Add salt according to salt in Cajun seasoning- if it lists salt as an ingredient- you<br />
won’t have to add much more.)</p>
<p>FASTEST OPTION for Rainbow Rice:</p>
<p>Instant brown<br />
1 package frozen veggies such as: peppers and onions or peas &amp; carrots<br />
¼ C water of broth<br />
(see cooking directions below)</p>
<p>FRESHEST OPTION for Rainbow Rice:</p>
<p>3 favorite fresh veggies- Diced Small<br />
Brown rice from scratch- Steamed 50 minutes<br />
¼ C water of broth</p>
<p>DIRECTIONS:</p>
<p>1. Start the rice according to package directions (I like to use chicken broth instead of water- this adds<br />
great flavor!)<br />
2. Put your sauté pan on medium heat with 1 T butter &amp; 1 T EVOO<br />
3. Season the tilapia with Cajun spices<br />
4. When the butter is bubbly- add the tilapia to the pan- presentation side down<br />
5. When the fish is cooked half way carefully turn over (you can tell when it is time to turn by looking<br />
at the side of the fish- it will look very white half way up) about 3 minutes<br />
6. Remove fish from pan and tent with foil or a lid<br />
7. ***TIME TO CALL THE TROOPS IN TO SET THE TABLE FOR YOU! NO PLATES ON THE<br />
TABLE TONIGHT AS YOU WILL PLATE AT THE STOVE*** continue cooking…<br />
8. To the same pan add the veggies of your choice<br />
9. Season with a little salt and pepper- your seasoning is already in the pan!<br />
10. Cook veggies to crisp tender- time will vary slightly depending on fresh or frozen veggies- about<br />
3-5 minutes<br />
11. While veggies are cooking, put the jar of cheese dip in the microwave and nuke for 2 or 3 minutes-<br />
stopping to stir after every minute. You want it to be very hot to reheat the fish. Be sure to stir after every minute or it will boil out of the jar and make a super mess!<br />
12. To the veggie pan add ¼ C water or chicken broth. (This is called deglazing the pan)<br />
13. Mix in the cooked rice Dinner is done!</p>
<p>The table is set! (Yea) Time to plate! Start with a bed of rainbow rice. Place a fish filet on top, spoon onto the fish a generous portion of cheese dip, hand off the plate to a child to put on the table as you continue to plate the rest of the portions. Now sit down and enjoy a beautiful meal with your family!</p>
