Lidia’s Italy Ricotta Cookies | February 3, 2012

I love cookies but Ricotta cookies are one of my all time favorite. Light and fragrant with freshly zested lemon, these little ricotta kisses will brighten any dreary winter day!  They are a cinch to put together so you can have a batch in no time.

Lidia’s Italy Ricotta Cookies

What You’ll Need:

2¼ cups all-purpose flour

1 teaspoon baking powder

Pinch kosher salt

1 cup granulated sugar

½ cup (1 stick) unsalted butter, at room temperature

2 large eggs

8 ounces fresh ricotta, drained

½ teaspoon vanilla extract

2 teaspoons lemon zest

Glaze

1/4 cup lemon juice

2 cups confectioners’ sugar, sifted

Best Gingersnap Cookies Ever! | December 23, 2010

These are the best gingersnap cookies I have ever made of tasted in my life. It’s an adaptation from The French Culinary Institute’s version (where I went to school) and thrills people every time I make them. They warm the house with the best smell possible during the holidays and (if you can imagine) taste even better.

Gingersnap Cookies

Ingredients:

2/3 cup unsalted butter
1/2 cup granulated sugar
2 eggs
160 milliliters of molasses
20 milliliters of vinegar
4 3/4 cup all purpose flour
1 tablespoon baking soda
1 tablespoon ground ginger
3/4 teaspoon ground cinnamon
3/4 teaspoon ground cloves
3/4 teaspoon ground cardamom

My great-grandfather, Gustav Hugo Schultze, was the baker for the White House. His bakery, Schultze’s, was on Connecticut Avenue. He would drive his horse and buggy up the circle drive to the White House and drop off baked goods that had been ordered the day before. Five generations of my family have enjoyed his recipes.

Lace Cookies | December 13, 2010

This recipe was passed down from my Great-Grandmother to my Grandmama to me. Please note the missing generation: my mother. She was banned from the kitchen by our family for fear of her burning down the house. (We got tired of holding the fire extinguisher.)

We have been making this cookie for years during the holidays. It is a recipe that my mom passed down to me.  Now I have passed it down to my son, Michael.

Holiday Drops

Ingredients

1 cup shortening

2 cups light brown sugar (packed)

2 eggs

½ cup buttermilk

3 ½ cups all-purpose flour

1 teaspoon baking soda

1 teaspoon salt

1 ½ cups pecans (chopped)

1 cup green candied cherries (halved)

1 cup red candied cherries (halved)

2 cups dates (cut up)

additional red and green cherries for top of cookie (halved)
