PINEAPPLE CUPCAKES w/ ONO COCONUT EUPHORIA RUM ICING | January 12, 2010

YUMMY! Coconut Euphoria Cupcakes!

INGREDIENTS:

1/2 cup of crushed pineapple
2 cups flour
1 1/4 cups sugar
1/4 cup vegetable oil
2 eggs, at room temperature
1 tsp vanilla
2 teaspoons baking soda
1/4 teaspoon salt
1/4 tsp of ginger
grated zest of 1 lime
1 tablespoon of ground ONO Coconut Euphoria tea (I like to use a spice grinder)
DIRECTIONS:

* Preheat the overn to 350 F
* Line or grease and flour 24 cupcake molds

2. Add the eggs one at a time and beat.
3. Add the vanilla essence.

Hello! Cupcake | April 1, 2009

People often ask me where I get my inspiration from when I bake. Honestly mine comes from my boys and just trying new things in the kitchen.

That said, I came across Hello! Cupcake last summer when I was specifically looking for a movie theme cupcake to share on my blog. I was not only pleasantly surprised by their designs, but at how easy to follow their instructions were and how easy to find the ingredients were.

Whether you’re a veteran baker or just starting out, this book is really worth giving a read. Happy baking!

Ghostly Marble Cupcakes | October 28, 2008

Ghostly Marble Cupcakes

1 white cake mix
4 eggs
1 c oil
1 c water
1-3 oz instant vanilla or cheesecake pudding, (cheesecake will be whiter)
1 5 ½ oz can of Hershey’s chocolate syrup
1-6 oz package of chocolate chips

Mix the first five ingredients and pour into 2 festively lined cupcake tins, to ½ full.  To the remaining batter, add the chocolate syrup, and mix well.
