30-Minute Meals: Southwest Salmon | February 28, 2011

Southwest Salmon combines the flavors of the southwest, tropical fruit, fresh and healthy fish full of Omega-3 Fatty acids – and it preps and cooks so fast and easily that anyone can make it.

The beans and the fruit mixture can be made long in advance, bringing the total prep and cook time at dinner down to about 10 minutes. It’s also very versatile. You can substitute chicken breasts, steak, or pork for the salmon, as long as you adjust the cooking time. You can also substitute the papaya for mango, diced pineapple, or even peaches.

30-Minute Meals: Ciopino | January 17, 2011

by Vicky DeRosa

Ciopino is thought to have originated in San Francisco.  It is believed that Italian immigrants from Genoa began making the stew from the catch of the day in the bay area.  Ciopino is a seafood based stew made with, tomatoes, wine and fresh herbs.  There are no set rules for the type of seafood to be used.

We enjoy Ciopino on Christmas Eve served over linguine.  My family likes it spicy so I add a little extra crushed red pepper to give it heat.  It seems to me that leftover Ciopino is … Read More »

Restaurant Favorites: The Stanhope House in Wharton, New Jersey | January 6, 2011

I remember being very excited when I heard the Stanhope House (the Last Great American Roadhouse) was under new ownership, renovated and open for business again after years of having its doors closed.  Then when I heard that the same cooks from Hot Rod’s in Wharton, NJ were also cooking for Stanhope House, I couldn’t wait to gather up some friends and try some soup, ribs, brisket and cornbread!

The newly renovated interior is spectacular, decorated in a tasteful speakeasy style.  The tables are one of the best features, they include old pictures and band passes and flyers from years of … Read More »

Enjoy a 30-Minute Copycat Recipe for Chinese Fried Rice Takeout | January 3, 2011

By: Kelly Donlea

Many who have tried it say they never, ever imagined they could make fried rice that is better than their favorite chinese takeout. And with a couple of chops and some stirring, you’ll be chopsticking it into your mouth in less than 30 minutes.

The recipe is flexible too. If you don’t have a green pepper, you can substitute a yellow bell pepper, or any combination of carrots, celery and peas. Or use beef or pork in place of the chicken, just add 5 minutes more to the cooking time.
