Summer Meals: Basil-Mint Pesto | August 11, 2011

Basil-Mint Pesto

By: Robin Donovan and Juliana Gallin, authors of The Lazy Gourmet: Magnificent Meals Made Easy

Ingredients:

3 medium cloves garlic

1 cup (tightly packed) basil leaves

1 cup (tightly packed) mint leaves

3 ounces (about 1 cup) grated Parmesan cheese

½ cup pine nuts

½ cup olive oil

¼ teaspoon salt

Directions:

Chop garlic in food processor.

Add basil, mint, cheese, pine nuts, olive oil, and salt and process until well combined.

Makes about 1 cup.
