Boyfriend Chicken | February 23, 2011

Roast chicken is classic comfort food. A side of mash potatoes, a little wine, some veggies, and a fresh baguette. Sounds pretty good, eh?

Several of my favorite chefs have variations for roast chicken, but each cook has their favorite ingredients to add or not add. But one thing’s for sure; roast chicken will please your man, or GET you a man if you don’t have one.

My daughter and her family have dinner at my house every Sunday. I try to prepare something that is healthy and delicious. My six year old grandson, Dylan, loves chicken, salad, and fruit. Here is a simple meal for a family of four that always satisfies.

INGREDIENTS:

4 skinless, boneless chicken breasts

8 gourmet petite red-yellow Idaho potatoes

2 Cara Cara Navel Oranges

Romaine lettuce leaves

Broccoli

Many who have tried it say they never, ever imagined they could make fried rice that is better than their favorite chinese takeout. And with a couple of chops and some stirring, you’ll be chopsticking it into your mouth in less than 30 minutes.

Resolutions from a Domestic Disaster | January 8, 2010

I have to admit, I’m not the most domestic mother on the block. I’m usually the one that rushes into the school bake sale at the last minute, hair dishevelled, cell phone ringing, with (gasp) store bought cookies, whilst the other parents give me pitying looks. I know. My poor child. Please don’t judge.
