If you are anything like me, you probably hate waking up early. You may even choose sleeping-in for an extra twenty minutes over preparing a healthy breakfast to jump start your day. I have hit that snooze button more times than I can count with only enough time to grab a breakfast bar and a cup of coffee if I’m lucky. I recently discovered a breakfast recipe that may have changed my morning routine. The best part is that it’s healthy and easy for the girl who would rather sleep in.
Breakfast Egg Frittatas
This is seriously the easiest thing I have ever made. I make the frittatas on Sunday nights and microwave them in the mornings. You can eat them all week!
This recipe is also easy to customize. I love vegetables so I usually throw in green onions and tomatoes. If veggies are not your thing, you can add bacon. (Or include all of the above) Below is the recipe I like to use, but mix your ingredients the way you like!
12 eggs
Salt and Pepper to taste
1 cup diced greeen onion
1 cup diced tomato
4 strips diced Turkey Bacon
1 cup Mozzarella Cheese
Preheat the oven to 350 degrees.
In a bowl, stir the eggs and desired amount of salt and pepper.
Dice the desired vegetables and meat. If using bacon, fry the bacon in the skillet and then chop.
Spray cupcake tins and put the vegetables and bacon in the tins. Pour the egg mixture over the ingredients.
Bake in the oven for 25 minutes or until the egg comes out of the tin easily with a toothpick.
To prepare the next morning, put the frittata in the microwave for one minute and enjoy!
Breakfast is the most important meal of the day and should never be ignored, even for late sleepers. These egg frittatas will give you a healthy and easy breakfast with at least two extra snoozes on your alarm.
